Converting Fixed Rudder to Kick Up

Currently converting the fixed rudder to kick-up. The rudder head is complete ready to trim for the tiller height and angle. The rudder has been cut and fitted to the head, It is ready for the lifting and lowering lines attachment. Next will be the tiller and hiking stick fabrication.

Please, anyone who can start me on the right path. I am trying to restore my elderly Albacore. A major problem is, since I have a fixed rudder and I frequently beach it, the end of a perfect day of sailing is a panic deciding how close to shore is the best time to pull the rudder. If anyone can help, it would be greatly appreciated.
